peeled and chunked
2.00 medium Green plantains
peeled and chunked
1.00 large Sweet potato
peeled and chunked

cut into thirds
2.00 large Carrots

1.00 medium Chayote
peeled and quartered

Place beef in large pot with water.

Add onion, garlic, cilantro, and bay leaves.

Bring to a boil.

Reduce heat and simmer until meat starts to tender.
