such as cod or sea bass, cut into chunks
1.00 kg Fish bones and head
for stock
2.00 medium Potatoes
peeled and diced
1.00 large Yellow onion
diced
2.00 medium Carrots
sliced
2.00 stalks Celery
chopped
3.00 cloves Garlic
minced
0.25 cup Fresh parsley
chopped
2.00 sprigs Fresh thyme
2.00 Bay leaves
1.00 cup White wine
dry
2.00 tbsp Olive oil
for cooking
1.50 tsp Salt
to taste
0.50 tsp Black pepper
freshly ground
1.00 medium Lemon
cut into wedges, for serving

Heat olive oil in a large pot

Cook onions, carrots, and celery
