Black-eyed peas
dried, soaked overnight
1.00 lb
Smoked ham hock
6.00 slices
Bacon
chopped

Onion

Bell pepper

Long-grain white rice

Instructions (8 steps)

In large pot, cook bacon until crispy, remove and set aside.

Sauté onion, bell pepper, and celery in bacon fat until soft.

Add garlic and cook 1 minute until fragrant.

Add drained peas, ham hock, Cajun seasoning, and 6 cups water.

Bring to boil, reduce heat and simmer 1 hour until peas tender.
