Instructions (8 steps)

Don't peel potatoes. Wash well.

Place in pot. Add water just to cover. Add all the salt.

Boil until tender, about 20 minutes.

Drain water. Return pot to low heat, shake until salt crust forms.

Make mojo rojo: roast peppers until charred. Peel, deseed.

Blend peppers, garlic, cumin, paprika, cayenne, vinegar, salt.
