10.00 lbs Bone-in ham
cured, uncooked
0.75 cup Dijon mustard
0.50 cup Brown sugar
1.00 Egg yolk
1.50 cups Breadcrumbs
fine dry
3.00 Bay leaves
10.00 whole Cloves
1.00 large Onion
quartered
1.00 tbsp Black peppercorns
2.00 cups Christmas beer
or dark beer

Instructions (8 steps)

Place ham in large pot with onion, bay leaves, peppercorns, and beer.

Cover with water, bring to boil. Simmer 2 hours until tender.

Remove ham, cool slightly. Carefully peel off skin, leaving fat layer.

Score fat in diamond pattern. Stud with cloves at intersections.

Mix mustard, brown sugar, and egg yolk into paste.

Spread mustard mixture over ham, press breadcrumbs to coat.

Bake at 425°F for 20-25 minutes until golden and crispy.
