If using jarred grape leaves, rinse well and soak in hot water 20 minutes.

Mix lamb, beef, rice, onion, herbs, spices, tomato paste, and salt.

Place grape leaf vein-side up. Put spoonful of filling near stem end.

Fold sides over filling, roll tightly from stem end. Not too tight - rice expands.

Line pot bottom with torn leaves. Pack dolma tightly in layers.

Mix broth with lemon juice, pour over dolma. Weight with plate.

Bring to boil, reduce to simmer. Cook 75 minutes until tender.
