Soak lamb head and feet in cold salted water for 2 hours.

Place in large pot with 12 cups water, onions, garlic, spices.

Bring to boil, skim foam thoroughly. Reduce to gentle simmer.

Add chickpeas. Simmer covered for 4-5 hours until meat tender.

Remove lamb head and feet. Pick meat off bones when cool.

Return meat to broth. Add lemon juice and cilantro.
