Instructions (8 steps)

Season chicken with salt, garlic, ginger, thyme.

Heat palm oil in heavy-bottomed pot with tight-fitting lid.

Layer onions, tomatoes, chicken, eggplant, okra, peppers, bay leaves.

Do NOT add water. Seal lid very tightly.

Cook on very low heat for 90 minutes. Do not open lid or stir.
