Boil meat with carrots, bay leaves, peppercorns for 2.5 hours until very tender.

Make noodles: mix flour, eggs, salt, water into stiff dough. Rest 30 minutes.

Roll dough very thin. Cut into large rectangles or squares.

Remove meat from broth. Slice thinly while hot.

Boil noodles in meat broth until tender, 8-10 minutes.
