Parboil taro cubes in salted water 15 minutes. Drain.

Line baking dish with banana leaves.

Layer half the taro in bottom of dish.

Add layer of mackerel, onions, tomatoes.

Add remaining taro. Season with salt and pepper.

Pour coconut cream over. Top with grated coconut.

Cover with banana leaves or foil. Bake 350°F for 60 minutes.
