Instructions (8 steps)

Brown lamb in olive oil. Add onions, garlic, cumin, harissa.

Add tomato paste, 6 cups water, chickpeas. Simmer 90 minutes.

Add potatoes. Cook 30 minutes until tender.

Make bazin: boil 4 cups salted water. Gradually add barley flour.

Stir vigorously 20 minutes until extremely thick and smooth.

Make well in center. Pour lamb stew into well and around dome.
