Make pasta dough: mix flour, eggs, salt. Knead smooth. Rest 30 minutes.

Blanch spinach, squeeze very dry. Chop finely.

Mix spinach, ricotta, chives, nutmeg, salt, pepper.

Roll dough very thin. Cut into 3-inch circles.

Place spoonful filling on each circle. Fold into half-moon, seal edges.

Boil in salted water 4-5 minutes until they float.
